When your jar of honey has been sitting for awhile, you may notice it thickens and changes color. This is a natural reaction called crystallization, and the honey is still perfectly good to eat. To return it to the smooth, golden honey you're used to, warm the jar gently in warm (never boiling) water and stir to incorporate. Never microwave the jar, which can damage the healing and nutritional properties of the honey.
